Chicken Fajitas & Homemade Salsa

Due to several requests here is my chicken fajita
and salsa recipes.

1 1/2 lbs of chicken thigh meat cut into strips
2 yellow onions sliced into strips
2 green peppers sliced into strips

Marinade:1/2 cup olive oil2 tsp liquid smoke
2 TBS apple cider vinegar
1 tsp honey
1/4 water
Juice from 1 lime.
1/4 tsp worcestershire sauce
3 cloves garlic minced (or 3 tsp of bottled minced garlic)
1/2 tsp oregano leaves1 tsp soy sauce
Split the marinade into two zip lock bags.
In one bag putthe onions and peppers with 1/3 of the marinade. In the otherbag put the chicken and 2/3 of the marinade.
Put bags inthe refrigerator and let marinade 4+ hours.

Cook the meat. Grill or cast iron skillet is the best.

Salsa.
2 cans Ro Tel tomatoes
1/2 onion finely chopped
1 tsp bottled minced garlic
Juice of 1 lime
1 tsp salt
1/2 to 1 jalapeno pepper, diced.
4 TBS fresh cilantro chopped.

Place all ingredients into food processor or blender and blenduntil mixed. Place in refrigerator until cool. This allows flavorsto blend.

I like a spicy salsa so do the whole jalapeno, seeds and all. If you like a more mild do about 1/4 jalapeno and no seeds.
